I assume you're not just talking about photography books with pretty pictures, but about techniques, ethics, practices etc.
Michael Langford - 'Basic Photography' [link] Michael Langford - 'Advanced Photography' [link]d_sim_b_1 Liz Wells - 'hotography: A Critical Introduction' [link]d_sim_b_2 Liz Wells - 'The Photography Reader' [link]d_sim_b_5
The Liz Wells books are quite heavy going and are all about the history, messages, symbolism etc. All of the above books are recommended reading for degree level photography.
Scott Kelby 'The Digital Photography Book' - it may be not that advanced but every and I mean EVERY photographer should read it, at least to know how to use a tripod extremely properly. You'll remember what I've said when you've read it. Beside National Photography books - they've published lately new series which are quite advanced.
I don't look at many that aren't those funny cat books you find in Borders, but I'm really fascinated by the National Geographic Photography collection of all their award winning photos....don't know if that means anything

Fantastic book.
I have a huge collection, if I think of any more I'll add them.
Anyway, hope that helped.
